I don’t make ridiculously lofty claims around here, like “the best recipe that ever existed.” But I’ll give it to you straight: THESE RECIPES WILL CHANGE YOUR LIFE.

Right now, I’m having a hard time thinking of any dessert that even comes close to the insanity of a perfect cookie sandwich.

1. Lace Sandwich Cookies

If you’re a toffee lover like me, then you know it’s insanely delicious. But you also know it can be a real workout for your teeth, which is a bummer. Good news: I have the solution.

These lace cookies are all about toffee and chocolate. Each super thin and lacey cookie is so buttery, nutty, and perfectly caramelized. They’re just SO good.

Slathered with some melted chocolate, they become this chewy, crispy, and altogether wonderful treat.

2. Colossal Snickerdoodle Cookie Sandwich

If a cookie the size of your hand sounds like way too much, just keep on scrolling. But if that sounds AMAZING, then you absolutely need to try these snickerdoodle sandwiches.

They are jam-packed with cinnamon sugar goodness, and the only real difference here is the size (and that filling, of course).

Stuffed with a heavenly mix of marshmallow, cinnamon, and cream cheese frosting, PLUS caramel, these are about as sinfully delicious as it gets.

3. Homemade Oatmeal Cream Pies

You know how the book is always better than the movie? Well, the same thing goes for homemade goodies versus the store-bought kind.

No offense to Little Debbie, but these homemade oatmeal cream pies are on another level.

They’re so soft and chewy, with just a little crispiness on the outside. And that filling is a sweet, creamy vanilla buttercream that just melts in your mouth. They’re buttery and just so, so good.

4. Coconut Macaroons: Cookies and Sandwiches

Coconut macaroons are one of my all-time favorite cookies. And this cookie sandwich recipe takes that yummy treat and just kicks it up a notch.

Between the sweet, chewy coconut and the rich chocolate ganache, they are like a macaroon and a macaron had a delicious baby.

5. Chocolate Sandwich Cookies

Chocolate, on more chocolate, with even more chocolate… is there anything better? I don’t think so. That means these cookies are basically perfect in every way!

Each sandwich has two soft cocoa cookies filled up with a rich chocolate ganache. It is a total chocolate lover’s dream.

6. Devil’s Food Whoopie Pie

These devil’s food whoopie pies are just sinfully delicious. And thanks to some cake mix and store-bought frosting, they are also ridiculously easy to whip up!

All you need is a box of Devil’s Food cake mix, some eggs, and canola oil. The cookies come out soft, chocolatey, and taste just like the OG whoopie pies.

Then you sandwich some pre-made cream cheese frosting in the middle and roll them in fun sprinkles. They’re just delightful, and everyone is going to love them.

7. Orange Chocolate Sandwich Cookies

I completely adore Terry’s Chocolate Oranges and seriously wish they were around all year. There’s just something so special about that combination of bright citrus and smooth, dark chocolate, and these little cookies prove it.

The sugar cookies are light and citrusy, bursting with fresh orange zest. On the other side of the flavor coin, the filling is rich, dark, and decadent. Put them together and you get something enchanting and delicious!

8. Viennese Whirls

These are, without a doubt, my favorite cookie sandwiches. They feature buttery, crumbly shortbread cookies filled with a bright, sweet, fruity jam (and sometimes vanilla buttercream too!). They are absolutely perfect!

They taste just like a strawberry shortcake, but the cookie part is… well, a cookie! If you’re not a huge strawberry fan, that’s okay!

You can use any jam, jelly, or marmalade you love. Or go in a totally different direction and add some chocolate or nut butter. Either way, these are totally addicting!

9. Red Velvet Cookies with Cream Cheese Filling

Classic red velvet cake in a cookie? Yes, please! These little beauties are perfect for Valentine’s Day but honestly, they’ll satisfy a craving any time of the year.

These Italian cookies totally hit the spot. They are sweet, easy, and super customizable! The cookie shells are made with a simple shortbread. Then, they get filled with your choice of filling.

Jam and ganache are the most popular options, but you can use whatever tastes great to you. You can also add things like zests, extracts, and teas to flavor the dough, though you might need to play around to get the consistency just right.

I’m a huge fan of raspberry ripple!

23. Banana Almond Whoopie Pies

If you can’t decide between banana bread and cookies… just don’t. These banana almond whoopie pies are the best of both worlds.

Each cookie is made with ripe bananas, almond meal, and spices, which makes them soft, cakey, and a lot like banana bread.
