Do you ever feel like breakfast is just too much work? Like, the whole plate and fork situation is more than you can handle before your first cup of coffee? Yeah, me too.
But friends. I am not about to leave you without options here. Welcome to the wonderful world of breakfast finger foods, where everything is easy, delicious, and requires absolutely zero utensils. You’re gonna go nuts.
1. Cinnamon French Toast Sticks
Why let the kids have all the fun? Seriously. These are made using a nice thick slice of white bread that gets rolled in a milk and egg custard mixture. Once you cook them, they have this amazing crunchy outside and a super soft inside.
Just a little pro tip: don’t forget to roll the hot sticks in that cinnamon-sugar mix right away so it all sticks perfectly.
Or, even better, you could try this French toast bagel recipe. It’s just as delicious, but that chewy bagel texture is a total game-changer!
2. Chewy Banana Quinoa Bars
Vegan, gluten-free, and peanut-free. These bars are just packed with so much goodness. I mean, come on!
And with quinoa in the mix, they are as nutritious as they are full of flavor.
Feel totally free to mix in any kind of nut, seed, or dried fruit that you love. And if peanuts are your thing, a spoonful or two of peanut butter would be an amazing addition.
3. The Easiest Homemade Pop-Tarts
There’s a reason we all love a good pop tart when nobody’s looking. They’re just so warm, sweet, and bring back all the memories.
And guess what? They’re ridiculously easy to make right in your own kitchen.
All you need is some store-bought pie dough, your favorite preserves, and a quick glaze. It’s that simple.
4. Copycat Starbucks Spinach and Feta Breakfast Wraps
When I’m looking for something that is easy, healthy, and super tasty, these spinach and feta wraps are my absolute go-to.
I am just so in love with the flavor you get when spinach is sautéed with butter and garlic. But let’s be honest, that creamy, salty feta is the real star of the show here.
Try adding a little smear of sundried tomato pesto for a little extra pop of flavor.
5. Baked Hash Brown Cups
I am a huge fan of starting my day with something savory and super filling. These hash brown cups are a perfect match!
They’re made with shredded potato, some bread crumbs, parmesan cheese, and seasonings. They are incredible on their own, but they also make the perfect little cup for holding eggs, bacon, or sausage. Yum!
6. Homemade Egg McMuffin
When it comes to kitchen gadgets, my breakfast sandwich maker is definitely one of my favorites. If you don’t have one, this recipe shows you how to use a microwave and a ramekin to get that perfect round egg shape.
The best part about these is that you can make a bunch of sandwiches at once and freeze them. Just pull one out, wrap it in a paper towel, and microwave it for a minute or two.
7. Blueberry Pancake Bites
You make these in a donut hole pan, so just picture them as little munchkins. The pancake batter is pretty liquidy, so you’ll want to be careful when you’re filling up the pan.
These get a blueberry right in the center, but you could totally experiment with chocolate chunks, little banana pieces, or even strawberry slices. Dream big!
8. Breakfast Burrito
Here’s another fantastic make-ahead breakfast. These freeze so well when they’re wrapped up tight. All you have to do is pull one out the night before and heat it up in the microwave.
You can go with something classic like sausage and egg, or take things to the next level with some spiced potatoes and chorizo.
9. Applesauce Bread
This vegan loaf is made with whole wheat flour, brown sugar, cinnamon, and applesauce, and it’s so soft. It is absolutely at its best when served warm.
The recipe calls for chopped walnuts and raisins, but you can easily swap those out for whatever you like. I personally think pecans would go so well with the cinnamon flavor.
10. The Elvis Peanut Butter and Fried Banana Sandwich with Bacon
This sandwich is just about as indulgent as you can get and it is definitely not for the faint of heart. We’re talking bananas, jam, peanut butter, and bacon all together. It’s a real mouthful!
You probably don’t want to make these too huge, since they are pretty decadent. Serve them up warm with a cup of coffee to wash it all down.
11. Breakfast Cookies
As a grown-up, it’s easy to forget that I can totally have cookies for breakfast if I want to. Who’s going to stop me?
Usually, logic takes over, and I end up with some boring cereal. But these cookies are an incredible way to trick my brain into thinking I’m breaking the rules.
They get their natural sweetness from dates and maple syrup and have oats, coconut, and flaked almonds for an awesome texture and a crispy edge. I love adding dried mango to mine to go with the coconut.
12. Blueberry Oatmeal Breakfast Bars
These one-of-a-kind breakfast bars are like a mix between oatmeal and blueberry blondies. They’re wonderfully chewy, not too sweet, and can be gluten-free if you use the right kind of oats.
Just like the recipe above, this one uses banana for moisture and gets extra sweetness from honey and blueberries.
13. Frittata Egg Muffins
If you love the idea of those breakfast cups but you’re not a big fan of the potato version, then this recipe is definitely for you.
You get all the amazing parts of a frittata, baked right into cupcake cups that you can take with you when you’re heading out the door.
14. Copycat Starbucks Petite Vanilla Bean Scones Recipe
As far as treats go, grabbing a grande caramel macchiato and one (or two) of these petite vanilla scones is probably the thing I missed most during the 2020 lockdown.
The scone itself is unbelievably tender and crumbly, but that glaze is the real showstopper. It’s just a simple mix of cream, powdered sugar, and vanilla, but seeing those tiny flecks on top always makes my baker heart so happy.
15. Sweet Potato Banana Bites
So delicious and healthy! These little bites are made with just four main ingredients.
After you mix the mashed sweet potato and banana, you’ll just stir in your favorite nut butter and two eggs. A few great additions would be some chocolate chips or even candied orange peel.
16. The Best Dang Granola Bars EVER
If I’m grabbing a granola bar in the morning, it has to be loaded up with good stuff, like nuts and dried fruits. And there absolutely has to be chocolate in there somewhere.
These granola bars are jam-packed with oats, seeds, and dried fruits. But the greatest part is definitely the chocolate base and the drizzle on top. Yes, please!
17. Breakfast Casserole Bites
Casseroles are such a great choice for breakfast, lunch, or dinner. They’re usually made in one dish, have tons of different elements, and are so warm and filling.
These little bites are pretty similar, with eggs and sausage, but they’re cooked in cupcake liners so you can eat them on the go.
18. Cinnamon Toast
Toast is so incredibly underrated. Bread is already delicious on its own, but when you cook it twice? That’s just pure magic!
All you have to do is spread your bread with some cinnamon and sugar butter and then broil it until it’s perfectly golden brown.
19. Copycat Baked Starbucks Bacon Egg Bites
You might be wondering how you can possibly recreate those sous-vide egg bites at home without the special equipment and still get that same silky texture. This recipe totally nails it using just the oven!
The secret is using a mix of cream cheese and ricotta to get the texture right, and a good, strong cheese for flavor. I really like using Gruyere in mine.
