The flavors and textures are like a little friendly explosion in your mouth.
1. Keto Vegetarian Breakfast Casserole
So we’ve covered lunch and dinner, but what about the most important meal? People on the keto diet need a good breakfast, too!
This tasty breakfast casserole comes together in just 30 minutes with simple stuff like onions, garlic, spinach, eggs, and cream. You finish it with some feta, salt, pepper, and butter.
It seems almost too simple to be true, but it is. It’s every bit as yummy and filling as any breakfast casserole out there.
2. Spinach Artichoke Stuffed Peppers
Let’s get real. Is there anything that doesn’t taste good when it’s stuffed with spinach and artichokes? Peppers are no exception. Honestly, they’re so delicious.
The peppers get all tender and a little charred when you bake them, but they still have enough crunch to be exciting. And that gooey spinach and artichoke mix inside? Oh my goodness. Pure bliss.
If you make these for a party appetizer, you better make a whole bunch, because everyone will want at least one. Maybe two!
3. Keto Skillet Tomato Cheese Pasta
Who knew pasta could still be on the menu? As long as you grab the low-carb kind, you are good to go. This dish is so light, with a sauce that is just delectably creamy and packed with flavor.
You’ll toss in some onions, red pepper flakes, and a ton of herbs for a slightly spicy, super herby taste that is just out of this world. It takes 40 minutes to make and is seriously simple to pull together.
4. Low-Carb Vegan Dinner Bowl
If you’re a fan of Asian food and need something that works for both vegan and keto diets, you have to give this dinner bowl a try.
It brings together some of your favorite veggies with soy sauce, rice wine vinegar, peanut butter, sriracha, and more. What a combo!
It’s got spicy, zesty, and earthy notes all happening at once, and it is so scrumptious.
5. Vegetarian Mini Bell Pepper Nachos
I’m pretty sure I’ve never seen nachos this pretty or colorful, and you only need five ingredients to make them happen (plus whatever toppings you want).
Instead of chips, you’ll use different colored peppers for the base. Then you load them up with black beans, pico de gallo, Mexican cheese, and some jalapenos.
Just bake that masterpiece until the cheese is good and gooey. Pull it from the oven and pile on all your favorite low-carb toppings. It’s such a delightful dish that’s as vibrant as it is appetizing.
6. Vegetarian Keto Burritos
For a vegetarian on the keto diet, burritos probably seem like a dream. But just like you can be a vegetarian doing keto, you can totally have burritos. Nothing’s off the table if you’re willing to get creative!
The secret here is making your own keto-friendly tortillas and then piling them high with peppers, onions, zucchini, kale, cheese, spices, and so much other yummy stuff.
These are so tremendously filling and tasty, you won’t be able to have just one. And with only nine net carbs each, you won’t have to!
7. Keto Low-Carb Vegetable Soup
When the days get a little shorter and the weather turns cool, there is nothing better than a hot bowl of veggie soup to warm you up. The problem? Most recipes have a ton of carbs.
But good news: this one doesn’t. By skipping the usual tomato soup base and using vegetable broth instead, the carb count goes way down.
It’s still packed with all your favorite veggies and seasonings, like onions, bell peppers, garlic, green beans, diced tomatoes, and Italian seasoning. It’s chunky, filling, and unbelievably delicious, especially on those colder nights.
8. Keto Vegetarian Bolognese
Okay, so the noodles are made of zucchini and the bolognese doesn’t have any meat, but I can promise you this keto vegetarian bolognese is just as delicious as any of the “real” stuff.
The zucchini noodles are light and tender, and the sauce is so chunky with a rich, mouthwatering tomato flavor. Plus, you’ll be using a ton of veggies—onions, cauliflower, eggplant, tomatoes, and more.
It makes for such a hearty dish, even without any meat or carbs.
9. Low-Carb Vegetarian Greek Briam
If you’ve never had briam, it’s basically the Greek version of roasted veggies, and it is incredibly yummy. This recipe features onions, eggplant, cauliflower, broccoli, zucchini, and more good stuff.
You’ll also cover the whole thing in a tart and tangy feta cheese. It’s pretty low in carbs and is packed with healthy fats. It’s every keto dieter’s dream!
10. Chipotle Lime Vegan Keto Tacos
These vegan tacos call for a lot of ingredients, but most of them are just spices and herbs for the homemade seasoning mix. They are actually so easy to make, taking only about 25 minutes.
And if you love your tacos just exploding with flavor, these are definitely for you. There is so much going on that you will never miss the meat.
11. Keto Vegan Mushroom and Spinach Spaghetti
If you’re not a fan of low-carb pasta noodles, you can always just make your own with zucchini. That’s exactly what you’ll use for this light yet filling keto spaghetti.
It’s so garlicky and full of low-carb veggies, and you top it off with pine nuts for a little extra crunch. It might not be the spaghetti you’re used to, but it is every bit as tasty.
12. Keto Eggplant Bake
This keto eggplant bake is a lot like eggplant parmesan (if you don’t bread your eggplant for that dish).
It takes about 45 minutes to pull together, and you’ll just need eggplants, olive oil, sea salt, pepper, tomato sauce, mozzarella and parmesan cheeses, and some spinach.
It’s so full of tomato flavor, super cheesy, and just very good. If you’re craving Italian, you just can’t beat it.
13. Keto Vegetarian Casserole
Mmmm… when it comes to a hearty, delicious dish, nothing beats a good casserole. And even though this one is simple and has no meat, it’s just as good as any you’ve ever tried.
Every single bite is even better than the last. The best part? It only takes 15 minutes of prep work and another 20 minutes to cook.
14. Low-Carb Cauliflower Mac and Cheese
I’m not going to lie to you, this cauliflower mac and cheese doesn’t taste exactly like the authentic stuff, but if you’re on the keto diet and have a craving, it totally works.
Instead of macaroni, you’ll be using cauliflower, which just doesn’t have the same flavor. But you will smother it in a buttery cheddar cheese mix that gets it pretty close to the real thing.
It is definitely creamy enough, and it tastes pretty darned good.
15. Keto Broccoli Salad
Broccoli salad is one of those fantastic dishes that’s already pretty keto-friendly without much tweaking. The only real change is using a low-carb sweetener instead of sugar.
And for this recipe, you’ll need to leave out the bacon. Other than that, it’s the same sweet, crunchy, veggie-packed side dish you already know and love.
16. Zucchini Grilled Cheese
A good old grilled cheese is not something anyone wants to give up, no matter how much they want to lose weight. And good news—with this recipe, you won’t have to!
Instead of using bread, you’ll make them with what are basically zucchini fritters. The texture is different from a “real” grilled cheese, but with the addition of onions and herbs, I actually think they taste even better.
17. Keto Quesadillas
All you’ll need for these crispy, cheesy keto quesadillas are some cauliflower thins from Trader Joe’s, your favorite kind of shredded cheese, and a bit of hot sauce.
They take just a little over 5 minutes to whip up. Once you top them with some sour cream and green onions, your tastebuds are going to be over the moon.
18. Zucchini Noodles With Pesto
This creamy, faux-pasta dish takes fewer than ten ingredients and only 25 minutes to put together. If you’re a fan of pesto and parmesan flavors, you are going to love it.
It’s so easy to make and tastes fantastic. Each serving has just 4.2 net carbs. For a quick lunch or a light dinner, you really can’t beat this one.
19. Low-Carb Mexican Cauliflower Rice
Mexican rice is that one side dish that just goes with everything. Plus, everyone loves it, and it’s easy to make.
If you’re one of those people who makes it all the time, you can still have it on the keto diet as long as you use cauliflower for the rice.
With onions, garlic cloves, jalapenos, tomatoes, bell peppers, paprika, cumin, and coriander, this rice is a total party for your taste buds. It’ll be hard to tell it isn’t the real thing.
20. Cheesy Garlic Roasted Asparagus
Baked asparagus is another one of those dishes that is naturally keto-friendly without any adjustments at all. It also happens to be one of my all-time favorite veggie side dishes.
This is especially true when you cover it with garlic, salt, pepper, and a whole lot of mozzarella cheese. I also like to sprinkle a little parmesan on top when they’re done. YUM.
